  • SPRITZ Olive Oil cooking spray
  • 1 large whole wheat tortilla
  • 3 egg whites
  • 1 whole egg
  • ½ cup chopped spinach
  • ½ cup chopped bell pepper
  • ¼ cup chopped pepperoni.
  • 1 chopped tomato.
  • Salt and pepper to taste
  • ½ cup reduced-fat shredded cheese (cheddar, Monterey Jack, or a mix)

Instructions:

  1. Prep the tortilla: Lightly spray a large muffin tin cup with SPRITZ Olive Oil cooking spray. Press the tortilla into the silicone/paper air fryer bowl to form a quiche base.
  2. Prepare the filling: crack the eggs, whisk together, salt, and pepper. Stir in the spinach, bell pepper, pepperoni, and tomatoes. 
  3. Assemble: Pour the egg mixture into the tortilla cup. Sprinkle with cheese.
  4. Air fry: Place the muffin tin in the air fryer and cook at 370°F (190°C) for 12-15 minutes, or until the eggs are set and the quiche is golden brown.
  5. Serve: Let cool for a few minutes before removing from the muffin tin. Serve warm.

Tips:

  • For extra flavor, add herbs like dill or chives.
  • You can substitute different vegetables based on your preference.
  • For a lower-carb option, use a cauliflower crust instead of a tortilla.
  • Add mozzarella or cheese of your choice.
