- SPRITZ Olive Oil cooking spray
- 1 large whole wheat tortilla
- 3 egg whites
- 1 whole egg
- ½ cup chopped spinach
- ½ cup chopped bell pepper
- ¼ cup chopped pepperoni.
- 1 chopped tomato.
- Salt and pepper to taste
- ½ cup reduced-fat shredded cheese (cheddar, Monterey Jack, or a mix)
Instructions:
- Prep the tortilla: Lightly spray a large muffin tin cup with SPRITZ Olive Oil cooking spray. Press the tortilla into the silicone/paper air fryer bowl to form a quiche base.
- Prepare the filling: crack the eggs, whisk together, salt, and pepper. Stir in the spinach, bell pepper, pepperoni, and tomatoes.
- Assemble: Pour the egg mixture into the tortilla cup. Sprinkle with cheese.
- Air fry: Place the muffin tin in the air fryer and cook at 370°F (190°C) for 12-15 minutes, or until the eggs are set and the quiche is golden brown.
- Serve: Let cool for a few minutes before removing from the muffin tin. Serve warm.
