Tortilla egg wrap

Ingredients:

  • SPRITZ butter cooking spray
  • 2 egg whites
  • 1 whole egg
  • ½ cup chopped spinach
  • ½ cup chopped bell pepper
  • 1 sliced tomato.
  • ¼ cup chopped or sliced olives
  • ½ cup pepperoni (if you prefer)
  • Salt and pepper to taste
  • 1 whole wheat tortilla

Instructions:

  1. Prep your pan: Heat a non-stick pan over medium heat. Spray lightly with SPRITZ butter cooking spray.
  2. Cook the vegetables: Add the tomato slices then add the veggies of your choice all over the pan until softened (about 3 minutes). 
  3. Cook the omelet: In a separate bowl, whisk together the egg whites, whole egg, salt, and pepper. Pour the egg mixture into the pan
  4. Spice: sprinkle with spinach, and fold the omelet in half.
  5. Place the tortilla: place the tortilla bread.
  6. Cook: cook until set, about 4-5 minutes.
  7. Assemble: Place the cooked omelet in the warm tortilla.

Tips:

  • For extra flavor, add your favorite herbs and spices to the omelet mixture.
  • You can customize this wrap with your preferred vegetables.
  • For a more filling meal, add a side of Greek yogurt or Mozzarella.
