Crispy Air Fryer Vegan Spring Rolls

Ingredients:
- 12 spring roll wrappers
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup thinly sliced red bell pepper
- 1/4 cup thinly sliced cucumber
- 1/4 cup rice vermicelli noodles, cooked and drained
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 1/2 teaspoon sesame oil
- SPRITZ Original Cooking Spray
Instructions:
- Prepare the filling: In a large bowl, combine shredded cabbage, carrots, bell pepper, cucumber, cooked rice noodles, cilantro, soy sauce, rice vinegar, and sesame oil. Toss to coat evenly.
- Assemble the spring rolls: Lay a spring roll wrapper on a flat surface. Place a generous amount of the filling in the center. Fold the bottom of the wrapper over the filling, then fold in the sides. Roll up tightly to form a spring roll.
- Prepare the air fryer: Preheat your air fryer to 400°F (200°C). Lightly spritz the air fryer basket with SPRITZ Original Cooking Spray.
- Cook the spring rolls: Place the spring rolls in the air fryer basket in a single layer. Lightly spritz the tops of the spring rolls with SPRITZ Original Cooking Spray. Cook for 8-10 minutes, or until golden brown and crispy.
