Vegan Tofu Scramble

Ingredients:

  • SPRITZ Butter Cooking Spray
  • 1 block extra-firm tofu, pressed and crumbled
  • 1 onion, chopped
  • 1 bell pepper, chopped (any color)
  • 2 cloves garlic, minced
  • 1/4 cup nutritional yeast
  • 1 tablespoon turmeric
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1/4 cup plant-based milk (like soy, almond, or oat)
  • Fresh spinach or kale
  • Optional toppings: avocado, salsa, hot sauce, vegan cheese

Instructions:

  1. Prep your pan: Heat a large skillet over medium heat. Once hot, spritz with SPRITZ Cooking Spray.
  2. Sauté veggies: Add the onion and bell pepper to the skillet and cook until softened about 5 minutes. Add garlic and cook for 30 seconds more.
  3. Crumble tofu: While the veggies cook, crumble the pressed tofu into a large bowl.
  4. Create the scramble mix: In a small bowl, combine nutritional yeast, turmeric, smoked paprika, garlic powder, black pepper, and salt.
